Healthy Anzac Biscuits
So coming up this Tuesday for the Aussies is ANZAC Day.
ANZAC Day is a day where we honour and remember the Australian and New Zealand soldiers who sacrificed their lives at home to go fight in World War I and II. We also honour the Australian soldiers who are fighting to this day so that we can enjoy peace and safety in our home country.
ANZAC biscuits were made by the soldier's families during the World War's to send over to them. They were made with minimal ingredients being oats, golden syrup and butter so they they wouldn't spoil before getting to the soldiers. As a tradition many Australian bake Anzac biscuits on ANZAC day.
I made this slightly healthified version for you to enjoy this ANZAC Day or any time with a cup of tea. Double the recipe if you are having friends over!
Ingredients
  • 1/3 cup oats
  • 1/4 cup desiccated coconut
  • 1/2 cup of cauliflower rice
  • 3 1/2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking powder
Method
  1. Preheat oven to 180°C  and line a baking tray with baking paper
  2. To make the cauliflower rice blitz about 2 large florets of cauliflower in a food processor (for this recipe you want it quite fine, like couscous almost)
  3. Add all of the ingredients into a mixing bowl and mix until well combined
  4. Use 1 heaped tbsp of mixture and form into a cookie shape and place on the tray
  5. Cook in the oven for 15-20 minutes until golden
